8 lime wedges
2 teaspoons of sugar
2 sprigs of mint [tapped to release essential oils]
2 oz. beet infused white rum
Splash of club soda
Ice
Sugarcane stick

Directions:

In a mixing glass, lightly muddle limes, sugar and one sprig of mint
Add a scoop of ice and 2 oz. of beet infused rum and shake
Pour into Collins glass and top with club soda
Garnish with a mint sprig and sugarcane stick

Additional information: For the beet infused rum, use 6 bottles of white rum and a 5-pound bag of beets (peeled).  In a large container, add the white rum and peeled beets. Steep for 3 days (at least), so the color and the earthy beet flavor is there. Then, pour rum into bottles for storing and pouring purposes.
