Our Latest Obsession: Open Faced Florida Stone Crab Ravioli

Known for it’s oceanfront views, contemporary design and top-of-the-line service, Eden Roc Miami has become a sought after destination for those traveling to Miami Beach. The resort has undergone some changes recently — with the most exciting change being the opening of their new signature restaurant — 15 Steps. Out went the former 1500 degrees and Chef Paula DeSilva and in that same space came 15 Steps and Executive Chef Jeremy Ford. This new restaurant is named after the 15 steps it takes to grow a vegetable, catch a fish and cook the perfect steak

Photo courtesy of 15 StepsFocusing on what is fresh and in season, Chef Ford’s menu is inspired by the garden and focuses on farm-to-fork and dock-to-dish selections — guaranteeing that guests will enjoy only the highest quality of ingredients. We were recently invited in for a tasting to experience 15 Steps and Chef Ford’s new menu. While everything that was served was truly outstanding (i.e.. a Roasted Carrot Salad with Swank Farm kale, walnut pesto, togarashi dusted sunflower seeds; Black Truffle Gnocchi with slow-braised pork shank, escarole, local squash, black truffle & quail egg)  — it was the Open Faced Florida Stone Crab Ravioli that won our hearts.

This luscious dish featured Florida stone crab, buttery greens and pickled mustard seed butter pillowed between layers of fresh open faced ravioli and garnished with Brussels sprouts leaves. Combined, these ingredients made for the perfect bite and one that we still can’t stop dreaming about. So, here it is —  our latest obsession — and one worth planning a trip to experiencing it.

This dish does rotate on the menu, as Florida stone crab is not always in season or available, so if you’re planning a trip in and want to try our new favorite, please call the restaurant beforehand.
