New Menu at Pistache French Bistro

In South Florida, a change of seasons doesn’t mean a huge change of temperature, but rather, a change in everything that goes along with it. In December, that means we can open the windows, there’s more traffic —  and the menus at many local restaurants get a facelift, thanks to the abundance of seasonal, local produce that is now available.  One such restaurant is Pistache French Bistro, a charming culinary hangout in downtown West Palm Beach . Not only do they have a stellar location (perfect for people watching) and a great wine list, they’ve just launched their new menu — and it is quite fabulous.

We were lucky enough to get an invite in to sample items off the new menu a few weeks ago (they launched the new menu in late November) and our palate was dancing in delight. Each dish that came out highlighted fresh ingredients, was properly seasoned and perfectly executed — all winners in our book. Did you know that broccolini and cauliflower were about to become your new favorite foods?

The new menu features a variety of small plates (yes, more things to try), cheese and charcuterie boards, entree-sized portions and of course, the decadent line-up of French pastries. Highlights on the new menu include Roasted Cauliflower and Broccolini (Trust us on this one. It’s that good.) served with an heirloom tomato gremolata and basil aioli; the Autumn Squash Salad made with Anjou Pear, ricotta cheese, pancetta and an apple sesame vinaigrette; and our favorite of the evening — a  succulent Crispy Spanish Octopus made with Picholine olives, smoked paprika aioli, arugula and sauce basque.

Other additions to the menu include a Cauliflower Tabouleh; a Salmon Tartare with avocado mousse, grapefruit, ginger oil and lemon aioli; Roasted Veal Sweetbreads with wild mushrooms and brioche croutons; Wild Idaho Trout with grilled brussels sprouts, lardon, sage and chestnuts; and Crispy Chicken Confit with braised coco beans, shaved fennel salad and sauce diable.
