Under the helm of Executive Chef Christian Quiñones, West Palm Beach’s Bistro Ten Zero One tantalizes diners with Floribbean cuisine.  Chef Quiñones, a native of Puerto Rico, uses locally-sourced produce and fish to re-imagine Caribbean dishes, from small plates to main entrees.

We were invited for a seated dinner at Bistro 1001 inside the Marriott Palm Beach hotel. Before heading to our table, the restaurant’s general manager gave us a tour of the hotel’s outdoor garden, which will be supplying the chef’s kitchen with greens and herbs.

At the table, we were able to experience chef’s fine culinary skills, starting with a small plate of pulled pork tacos.  The tender pork, encased in crispy tortilla shells, had a wonderful blend of sweet and spicy flavors from pineapple-papaya compote and spicy mayo toppings.

Next, a simple salad becomes extraordinary. The dish starts out with sliced organic Heirloom tomatoes from Farmhouse Tomatoes in Loxahatchee. Topping the salad is Feta cheese, garden mint, and Basil Crumbs –a scrumptious combination of bread crumbs and fresh basil. Then, the plate is perfectly finished with a drizzle of white balsamic vinaigrette dressing.

For our main course, pump pan seared scallops over a superb green pea-asparagus risotto.

TIP: Arrive on Fridays, between 5-7 pm, to enjoy live music with pre-dinner drinks specials. At dinner, enjoy 50% off select bottles of wine from 5-10 pm on Friday evenings.
